Pumpkin and Lentil Soup
Ingredients:
1 small pumpkin, peeled and cut into cubes
1 cup of washed red lentils
1 chopped onion
2 cloves of garlic, chopped
1 tablespoon of olive oil
1 teaspoon of ground cumin
1 teaspoon of ground ginger (or grated fresh ginger)
4 cups of vegetable broth
Salt and pepper to taste
Instructions:
In a large pot, heat the olive oil over medium heat. Add the onion and garlic, and sauté until golden.
Add the cumin and ginger powder (or fresh ginger) and stir for a few more minutes to release the aromas.
Add the pumpkin cubes, lentils, and vegetable broth. Bring to a boil.
Reduce the heat, cover the pot, and let it cook for about 20-25 minutes, or until the pumpkin and lentils are tender.
Use a blender or hand mixer to blend the soup until smooth.
Season with salt and pepper to taste.
Serve hot, garnished with fresh cilantro, if desired.
